The beans are aged in burlap sacks that are aired, dusted and flipped. As they age the beans turn from green to light brown and their flavour gains strength and loses acidity. Flavours can range from cedar to cinnamon and clove and can develop a thick syrupy-feel that can be very appealing to many coffee drinkers.
