Zambia Black honey is a medium roast bean with the Black Honey process.
Honey processing is when the mucilage is left on the bean before the drying process begins. The mucilage layer is beneath the pulp and skin of the berry and keeping this layer on while drying imparts a sweeter finish to the coffee profile.
Each honey process is dependent on how much mucilage is left on as we all as to how long the drying time is and how much sunlight it is getting.
Black honey processing is when the beans are rotated every 24 hours rather than every hour as the red honey and yellow honey-do.
There is no actual honey added to the coffee beans but is rather the name of the process, and actually gets its name from honey-like texture and colour that the mucilage is naturally.
We have taken this bean and roasted it to a medium roast, allowing its natural sweetness to shine through.
